Besides having a fertile ground for agricultural practices, the mountainous region of Sidikalang (North Sumatra) is famous for their green beans’ production that presents an intense and complex flavour that is often compared to Southern American coffee.
This particular variant of Rasuna coffee has a well-balanced profile, with unique notes of chocolate, green apple and roasted peanut that leaves a clean aftertaste.
The classic natural process of coffee is done by drying picked cherries under the sun, before removing the skin and dried fruit flesh from the green beans.
The coffee beans are then stored and “rested” before being transported to our roastery.
Natural process always yields a sweet, fruity flavour, with a more fermented wine-like taste.
