Manggarai is one of the potential regencies in Flores, East Nusa Tenggara, that able to create a coffee beans with unique aroma and flavours. Tanamera coffee control the cultivation quality of the beans, starting from the variety selection, fertilization, pruning, and prevention to pests and disease. After harvested, there are two kind of process to determine the characteristic of the beans: washed and honey process.

In honey process, after picked and peeled, the beans are dried under the sun directly without being washed. This process is to enable us to have an intense-sweet acidity aroma and taste. The next step is to determine the roasting level to maximized the characteristic flavour of the Flores Manggarai.
